Roasted Sweet Potatoes

Roasted Sweet Potatoes

  • 3 lb Sweet Potatoes – cut into 8 wedges
  • 1/3 to ½ c Olive Oil
  • 1.25 tbsp Sugar
  • 1 tsp Salt
  • pinch Black Pepper
  • pinch Cayenne Pepper

Peel potatoes and cut each potato into 8 wedges lengthwise. In a mixing bowl combine all ingredients with a wire whisk. Add potato wedges and toss until evenly coated. Spread evenly on sheet tray or roasting pan. Roast in oven at 375 ° for 10 minutes. Rotate and stir potatoes and roast 10-15 more minutes or just until lightly browned and fork tender
